Italian Sausage Flatbread Sandwich
I love making sandwiches with sweet Italian sausage and flatbread. Combined with sautéed peppers and onions, the herbs and spices in the sausage give it a wonderful flavor. Whenever we have a fresh batch of flatbread, this is one of the first sandwiches we make. It only takes 10 minutes to prep and 15 minutes to cook. And there’s nothing more to it than just sautéing the onions and peppers and letting the spices from the sausage supply the great taste. A few slices of melted provolone cheese make it even better. Whether you use fresh flatbread or have a stash in the freezer, this is a delicious and quick recipe that you can whip up anytime.
Tip
The sausage should release enough fat on its own, so you don’t need to add any oil to the pan during cooking. However, if it’s very lean, add 1 tablespoon of olive oil.

Italian Sausage Flatbread Sandwich
Ingredients
- 5 flatbreads Get the Recipe
- 12 ounces sweet Italian sausage, casings removed
- 1 tablespoon extra virgin olive oil, if needed
- 1 large onion, sliced
- 1 red bell pepper, cut into thin strips
- 1 yellow bell pepper, cut into thin strips
- Sliced provolone cheese (or mozzarella)
- Mayonnaise
- Salt and pepper to taste
Directions
Place the sausage in a large skillet over medium heat. If it’s very lean, add 1 tablespoon of olive oil. Break it up with a fork and cook until the sausage is no longer pink, about 3 or 4 minutes. Remove any excess grease if necessary and discard.Add the peppers and onions, and stir to combine. Lower the heat to medium-low and cover with a lid. Cook for 10 minutes, stirring once or twice.
Lay the flatbreads out on a large sheet pan. You may have to do this a few at a time depending on the size of your pan. Place the filling on one half of each flatbread. Top with provolone and place under a preheated broiler just until the cheese starts to melt. Remove from the oven and spread mayonnaise on the other half of each flatbread. Season with salt and pepper. Fold in half and serve.
